So if you remember from this post where I showed you how to make Zucchini noodles which I was over the moon happy when I saw all y’alls recipes after that! I took to another “noodle” recipe and tried my hand at sweet potato noodles. I was so dead tired the other night this is all I could muster up in the recipe department and surprisingly it was quite tasty……probably because I grated truffle cheese over the top. Let’s be honest, truffles make anything taste better. I probably should have found a peeler that wasn’t from 1987…..it was a little scary but managed to get the sweet potato peeled without losing a finger. Get ready for the easiest recipe you’ll ever read.

-Bag of shredded kale (I got mine at Trader Joe’s)
-One large Sweet Potato
-Seasonings: salt, pepper, red pepper
-Truffle Cheddar Cheese
Peel your sweet potato and chop off the ends
Put onto your spiral machine and choose the middle blade
Turn the magical wheel
In a deep sauté pan with lid (I used this one) add 1/2 cup of water and olive oil drizzle. Cook up to medium heat.
Add kale, salt, pepper, and cover for 1 minute
Add the sweet potato noodles
Add seasoning. I like a lot of red pepper because I’m spicy like that
Toss the kale and noodles together for less than five minute then take off. You don’t want to overcook the noodles
Grate a generous helping of cheese over
Relish in the fact you are eating healthy noodles that taste good
Then try to limit yourself to only two pumpkin spice oreos because they are crack addicting and it’s not your fault when you eat one tray in a sitting when unsupervised.
