When I was in my gorgeous little princess pad (all 700 sq ft of it) and I used my oven for storage……I definitely experimented with a lot of pinterest worthy recipes. Now that Mark and I are sharing the same kitchen he has pretty much taken over all things cooking. That includes grocery shopping. I honestly cannot remember the last time I went. It is glorious.
I had seen so many pins floating around about roasted chickpeas and thought I’d try my hand at it. For once I had all the materials and thought it would be a great addition to my salad assembly line of daily lunches. Let me give you a forewarning…..these are so addicting. You will pretty much eat the entire tray. So just make two cans if you want any hope of leftovers.
- First preheat your oven to 400.
- I prefer the organic chickpeas but these were BOGO…..so you know how that goes. Strain and rinse out the beans in cold water to get the extra salt off them. Then pat them dry with a paper towel to get the excess water out (that helps them get really crispy!).
- Transfer to a bowl and add a swirl of sesame oil. I think this pulls together the whole taste but if you just have regular olive oil that totally works as well
- Then drizzle the sriracha over the chickpeas till it has a nice coating. I detest using measuring devices…..it just means extra clean up. If I had to guess it would be a tablespoon. Basically you want the liquids to coat the chickpeas and not have a lot of excess on the bottom. More liquid = not as crunchy chickpeas.
- Since I was wanted to make these quickly I lazied it out and sprinkled the garlic and salt mix over the top. I think crushed garlic would be great as well but once again adds extra liquid.
- I used Trader Joe’s olive oil spray lightly on a baking pan. Spread the chickpeas out so they aren’t layered on top of each other.
- Pop in the oven for 20 minutes. Take them out flip and then cook another 15-20 mins.
- Take them out and you can add a little more sriracha if you are feeling a little spicy….which I usually am.
- Enjoy! Mark had them as a side. I put them over a salad with avocado. Nice balance with the spice.
If you have leftovers……which may not be the case….trust. However if you do put them in an airtight container. To get them really crunchy again you can quickly sear them in a frypan. Hope you try your hand at this one! xoxoxo

I’ve made these before and they are DELICIOUS! I don’t think I made it with sriracha tho, so that might be an interesting difference (I think I used chili powder when I did it). Love a good easy and tasty snack!

I made some roasted Parmesan Chickpeas sometime last year and they just weren’t very good. With the siracha and garlic…I bet these would be a lot better! I may need to try it. I love make kale chips too.
